Not to mention authentic Hungarian Goulash!!!

A classic cold-and-rainy-night-comfort-filled-dish… this recipe is from a Hungarian blog, Chili & Vanilia, fresh out of Budapest.  It includes vital terminology  (PÖRKÖLT versus GULYÁSLEVES versus PAPRIKÁS. Also secrets to the dishes… a very thorough explanation to dishes and recipes.

If you want to do chicken instead of beef or pork, the Chicken Paprikash with Nokedli (Csirke Paprikás) is one of my most favorite dishes, on many cook`s `Five Hungarian dishes you must eat before you die` lists.  The No Recipes blog has some good pictures.  If you don`t have the potato press, you can cut the nokedli off a cutting board with a knife, like this.
